Gourmet chefs seek this oil\, but production is limited\, making them expensive and even more sought after. As with wine\, these oils vary in taste from year to year\, depending on the amount of sunshine\, temperature\, wind and rain. \nFor almost 2\,000 years\, olives have been the symbol of Croatia’s Istria region. Its geographical location\, soil composition and microclimate made it ideal for growing olives\, much to the delight of ancient Greeks and Romans – who knew a thing or two about Living the Good Life!
